Lychee Rice Pudding

Helloo everyone i am back after a long break, hope you all are doing great. As i adore and love cooking there's an awesome dessert presented to you all.. hope you all love it.


Lychee Phirni
Serves- 3-4

Ingredients-
1 litre milk
4 tbsp basmati rice, soaked
¾ cup lychee
1 ½ cup lychee crush or grinned lychee
1 tsp water
¼ tsp cardamom powder
½ cup khoya
10-12 almonds, blanched and chopped
10-12 pistachios, blanched and chopped
Charoli (nut used specially in kheer)
½ tsp rose water
7-8 saffron strands (optional)

Method-
Boil milk and rice in a non-stick pan.
Stir continuously, till mixture thickens
Once it thickens add sugar, lychee pieces, lychee crush and mix well.
In about 1 tsp of water add the cardamom powder and mix it with the lychee mix.
Add the grated khoya (optional) , rose water, almonds and pistachios.
Once the mixture is thick remove from the flame and mix continuously till the mixture turns cold.
Pour in an different vessel and let it cool in refrigerator.
Serve with a garnish of almonds, pistachios and lychee😍
